Superior grade Scottish Salmon is harvested fresh, selected from the seawater along the rugged coast and lochs of Scotland.
Carefully filleted, each one is then covered with premium grade pure dried salt, British sugar and a hint of rich Demerara Molasses. They are then left to cure in a chilled atmosphere for a full day and night.
The salmon fillet is gently washed in chilled water, laid on trays and smoked for up to 12 hours over virgin oak chippings to give it its distinctove flavour.
Each fillet is then 'hand trimmed,' sliced and packed for our customer to enjoy.
