One of the 'new world' caviar s available today. Caviar produced from a hybrid of Huso Dauricus and Acipenser Schrenkii, both indigenous to the Amur River in Northern China.
This caviar has a very large grain, with a colour range of emerald to dark browns. A very full flavoured caviar with a firm texture and buttery finish. Superb as an eating caviar or to use in sauces and garnishes.
An alternative to the classics, and equally as good. Well worth a try.
