Squab pigeons are young pigeons bred purely for consumption and they are delicious! Fed purely on pigeon's milk (it's true - the pigeon is one of only a handful of birds that actually produces milk) which is laden with fat and protein, they have become incredibly popular in London restaurants thanks to their intense, gamey flavours and are pretty much suitable for almost any recipe involving game.
One bird is enough per person; however, if stuffed it can serve two. Be careful not to overcook it as pigeon flesh, being quite delicate, does not cope well with intense heat. Slow and softly is the way forward.
