Once de-veined and fully prepped, the high-quality foie gras lobe is flash frozen to sub zero temperatures before being heat sliced into near-prefect 50g portions.
Due to the flash-freezing process, the raw foie gras retains its structure as well as its original fresh taste so it subsequently reduces very little when cooked and does not disappear in the pan!
The 50g pieces make perfect portions for your guests and only need 15 - 20 mins acclimatising to normal room temperature before serving. Simply pan-fry on its own in a med/hot pan (no fat needed) cooking either side for 45 - 60 seconds max, and you'll have a perfect Seared Foie Gras starter.
