Fragile, flower-like with long, slender stems and tiny caps, Enoki mushrooms grow in small clusters. They have a mild, light flavor with a slight crunch. Enokis last for up to 14 days. Keep refrigerated in paper bags.Use raw in salads and sandwiches. Use as a garnish for soups and salads.
Named after the enoki tree that it grows on, the wild variety has a tiny yellow-orange cap with a long, slender stem, the more common cultivated variety are a creamy colour. They have a sweet, fruity flavour with a slight crunch.
