Chicory, or endive, as it is sometimes known, adds a delightful, slightly bitter edge to salads. Essential in many recipes it also works well baked or stir-fried.
Recipe
Honey baked chicory
50g butter
4 heads chicory, trimmed and halved lengthways
50ml truffle honey
juice of one small orange
salt and freshly ground black pepper
Preheat oven to 180C, gas mark 4. Dot half the butter over the bottom of an oven proof dish. Arrange the chicory flat side down, pour over the orange juice then drizzle on the honey and dot with the remaining butter, add salt and pepper to taste. Bake for 1 hour turning the chicory every 15mins. This should allow a beautiful sticky sauce to be produced.
