This is a gourmet-quality air-dried beef fillet, also known as bresaola. Cut so wafer thin that 25g will cover a 10-inch dinner plate, it is a moist and delicate meat with fantastic depth of flavour. Mix white truffle oil with lemon juice, drizzle it over and serve with crusty bread. Some also sprinkle with flakes of Parmigiano for an added taste explosion.
