Bottarga (also known as boutarque) is a Sardinian speciality, and once you have tried it you will want to taste it again. Hand-salted mullet roe is dried and then grated for an intensity of flavour that is unsurpassed.
It is not used in recipes as such, it is the topping on the salad, sprinkled over pasta, mixed with finest olive oil and used as a dip for bread.
