Caesar dressing
2 egg yolks
4 cloves garlic, finely chopped
5 anchovy fillets, mashed
juice of one lemon
100mls olive oil
50g Parmesan, grated
Whisk the garlic, anchovy, lemon juice and Worcestershire sauce until blended. Now beat in the egg yolks until the mixture thickens. Drizzle in the olive oil with one hand while whisking the mixture with the other hand. Now stir in the Parmesan cheese. Makes a delicious dressing for all kind of foods.
