Similar to fresh Italian Alba white truffles, where the larger truffles bear the best tastes and aromas; larger Beluga eggs always have a better taste to a smaller Beluga egg, hence the grading of the eggs. Furthermore, the older the sturgeon the better the taste, hence the 'a' grading. 

000 graded Beluga eggs are the largest in size with pearlescent eggs that have a delightfully delicate skin that pops on the roof of your mouth with a truly 'palate-tickling' creamy aftertaste.

The London Fine Foods 'Private Collection - Imperial Beluga Caviar 000a Grade' caviar comes only from mature Beluga sturgeon (which nowadays is a very rare catch due to the intensity of commercial fishing in the Caspian Sea).
