The salmon is farmed on the first salmon farm to be certified organic by the Soil Association. Located off the shores of Westray, one of Orkney’s most northerly islands, the farm remains to this day arguably the most exemplary salmon farm in the country. The cages are very low density, the fish are hand fed, the waters in which the cages are anchored are extremely tidal making for very clean currents which keep the cages from clogging up with waste and the salmon fit and healthy as they constantly swim against the tide.
Once the fish has been landed and iced, it travels the short distance to mainland Orkney where Jolly’s fishmongers smokes the undyed flesh over wood chips in a traditional kiln. Jolly’s has a deserved reputation as one of the best smokers in Scotland. The combination of the organic salmon and their smoking skills makes for a very special product.
