Distinctive in its truncated pyramidal shape, Valençay is an unpasteurised goats-milk cheese.
Its rustic blue-grey colour is made by the natural moulds that form its rind.
The young cheese has a fresh, citric taste, with age giving it a nutty taste characteristic of goat's cheeses.
Covered with ash to facilitate the development of mould, this cheese ripens in a well-ventilated room at 80% humidity. It matures for 3 weeks before it is ready for sale. (French)
