Made by Charlie West and Haydn Roberts on their farm at Dorstone on the Hereford/Welsh border.
A semi-soft cheese made from unpasteurised goat's milk using a vegetarian rennet. This small column-shaped cheese has a crisp white colour that contrasts with the blueish-grey colour of its rind.
The texture of the cheese can vary from being fluffy to flaky depending on the maturity of the cheese, with a yoghurty and milky flavour and a slight nuttiness on the rind.
