Known as the King of Bries, Brie de Meaux is made from well-matured raw cow's milk. This soft and savoury cheese has a earthy aromatic taste with a hint of ammonia. Named after the French province in which it originated, it is pale in colour with a slight greyish tinge under crusty white mould. The white mouldy rind is tasteless and edible and is made in the shape of a flat wheel.
