Gesier de Canard Confit is a speciality of south-west France. Delicious served hot with Puy lentils or sliced with salads, it is a traditional food made the traditional way, no additives, preservatives, or colouring, just duck and duck fat. Fantastic mixed with potatoes and roasted, serve with apple and mosto cotto sauce.
